I know that you are suppose to ease off the cunningham and outhaul but when is too much? How can I tell I have the correct shape for light air?

The simple answer is to stop easing when the boat starts going slower, rather than faster. Each boat and sail is going to need to react differently to sail trim. Get out and practice (A LOT), and try different settings. After some time you will get a feel for what works. When you do, mark those settings so you can get back to them quickly when racing. Nothing beats time in the boat for developing the knowledge and feel you need to make your boat go fast.

I understand the wind angles can be helpful when trying to get the helmsman in the ball park. Target boatspeed when used correctly will keep the helmsman and trimmers in sync with the dynamics of the boat.
